Possible he wants to add an NCAA championship ring to his collection.

Unemployment doesn't pay very well.
When people make a lot of money, they tend to make more expensive investments. For example, buying multiple homes, car collections, boats, etc. The payments keep coming in on those things. Plus, I'm sure he wants to have as much as possible for retirement and quality of life for his family.
I don't know if he's really interested in Oregon or not. But, given that he was just fired from an NFL team, it doesn't seem like it would be a bad career move at all.
